About the Wineries
JONATA and The Hilt Estate are two very distinct properties located just a couple hours north of Los Angeles in California's Santa Barbara region.
Three different brands are produced: JONATA, The Hilt, and The Paring. Each reflect a dedication to meticulous farming which includes no pesticides and a precise approach to winemaking in the cellar.
JONATA, situated in the Ballard Canyon AVA, is a 600-acre estate with 80 acres planted under vine. Sandy soils are pervasive throughout the property which creates challenging farming conditions but critically acclaimed wines. This estate is dedicated to expressing a range of red wines—and a handful of white—with a particular commitment to cabernet sauvignon, merlot, cabernet franc, and syrah.
The Hilt Estate located in the southwest corner of the Sta. Rita Hills AVA, is a 3600-acre property with three very distinct vineyards: Bentrock, Puerta del Mar and Radian. Only 200 acres are planted on this sprawling property, which is influenced with whipping cool maritime winds and diatomaceous soils with a focus to pinot noir and chardonnay.
The Paring wines are from the vineyard blocks that are either too young or don't fit into the vintage style of the highly acclaimed Jonata and The Hilt wines—The Paring is essentially a "chip off the old block." Wines range from a red blend, sauvignon blanc, pinot noir, chardonnay, syrah and a rosé of pinot noir.
